How White Wine Is Produced: A Step-by-Step Guide From Vineyard to Glass

Wine may look simple and elegant in the glass, but behind every bottle is a fascinating series of decisions, techniques, and traditions. Whether you’re a wine lover, an aspiring sommelier, or just curious about how your favourite Chardonnay or Pinot is produced, here’s a clear and engaging look at how white wine is made.

Harvesting: The Beginning of the Journey

The process starts in the vineyard, where grapes are picked at just the right moment. White wine grapes are usually harvested earlier than red grapes to keep acidity high and flavours bright.

Harvest timing has a significant impact on the finished wine. An earlier harvest produces crisp, light wines with higher acidity, while a later harvest creates fuller-bodied wines with richer flavours.

Harvesting can be done by hand, which offers precision, or by machine, which provides speed and efficiency. Here at Sealwood Estate, we harvest all of our 4,500 vines by hand.

Crushing & Pressing: Keeping It Clean and Fresh

Unlike red wine production, white wine juice is separated from the skins immediately. This helps maintain the pale, golden colour we associate with white wine.

First, the grapes are gently crushed to crack them open. They are then pressed so the juice is quickly separated from the skins, seeds and stems. This rapid separation prevents bitterness and unwanted colour from entering the wine.

Settling the Juice: Clarifying the Must

The freshly pressed juice, known as must, contains small pieces of pulp and other natural particles. Wineries chill the juice, allowing these solids to settle to the bottom before the clear juice is transferred for fermentation.

The result is cleaner juice, which leads to a cleaner fermentation and purer flavours in the finished wine.

Fermentation: Turning Juice Into Wine

Fermentation is the stage where yeast converts the natural sugars in the grape juice into alcohol. This process is carefully controlled to preserve delicate aromas and flavours.

Cool fermentation temperatures, typically between 10°C and 18°C (50°F to 64°F), help retain fresh floral and fruity characteristics. The vessel used for fermentation also influences the final style of the wine. Stainless steel tanks produce bright, crisp and fresh wines, while oak barrels create richer wines with subtle vanilla and spice notes.

Some winemakers rely on naturally occurring wild yeasts, while others choose selected yeast strains to ensure consistency.

Optional: Malolactic Fermentation for Added Creaminess

Not all white wines undergo malolactic fermentation (MLF), which is a secondary process that softens acidity and changes the wine’s texture.

Chardonnay often undergoes malolactic fermentation, resulting in the buttery and creamy style many people enjoy. Sauvignon Blanc, on the other hand, usually avoids this process to maintain its vibrant, fresh and zesty character.

Aging: Developing Flavour and Texture

Once fermentation is complete, winemakers decide how and where the wine will age depending on the style they wish to create.

Wine aged in stainless steel retains its freshness and fruit-forward character, while oak barrel aging adds texture and complexity. Some wines are aged on their lees, the spent yeast cells left after fermentation, which can enhance body and introduce toasty, brioche-like flavours.

Some winemakers also use a technique called bâtonnage, where the lees are stirred periodically to create an even richer texture.

Clarifying & Stabilising: Making It Brilliant

Before bottling, the wine is refined to ensure it is clear and stable.

This process may include fining, where particles are bound together so they can be removed, filtration to remove remaining impurities, and cold stabilisation to prevent tartrate crystals from forming in the bottle later on.

These steps help ensure the wine remains clear, stable and visually appealing.

Bottling: The Final production step

Once the winemaker is satisfied with the finished wine, it is bottled under sterile conditions.

A small amount of sulfur dioxide (SO₂) may be added to help preserve freshness. The bottles are then sealed with either a cork or screwcap, labelled and prepared for distribution.
